I’m using December as an excuse to put cardamom in almost everything I’m making, including this granola. I’ve tried various recipes using different types of oil, but (in my opinion) there’s nothing that comes close to the flavour of browned butter in granola. We managed to finish off a whole batch in one day.
40g nuts of choice, roughly chopped (I used macadamia and walnuts)
2tbsp brown sugar
100g golden syrup
1tsp vanilla extract
2tsp cardamom (ground)
Prep: 10min | Cooking: 30-35min
Mix all the dry ingredients except for the brown sugar. Meanwhile, melt the butter in a pan over medium to high heat and cook until browned. Stir the brown sugar and vanilla into the butter. Finally, combine everything spread over a baking sheet. Bake in the oven at 150c for 30-35min.
